Savoury Vinegars - Tomato

The tomato is native to Central and South America and is a perennial in warm climates. It was spread to the rest of the world by the Spanish colonization of Mexico.


1 medium head lettuce
1 lb bacon, cooked and crumbled
1 cup mayonnaise
1 cup sour cream
1 lge tomato seeded and diced
2 tbs Savoury Tomato vinegar
1 tbs Savoury Garlic vinegar
1 tbs Savoury Peppers vinegar
Pinch black pepper

Blend all ingredients except the bacon. Remove inside leaves forming a bowl. Place the blended mixture into a bowl and refrigerate. Before serving mix in the crumbled bacon and spoon mixture into the head of lettuce.

Tomato Mozzarella Starter

1/2 cup buttermilk
1/2 tsp salt
1/4 tsp pepper
3 tbsp Tomato Vinegar

Arrange sliced tomatoes and sliced fresh mozzarella alternately on a bed of baby spinach on a narrow dish. Drizzle the dressing over slices.

Remember to add vinegar back to your bottle after ever use.  Use vinegar with the lowest acidity you can find.  Store on counter - does not need refrigeration.
